Uncle Jim’s Grillin’ Spice

Ingredients

2 oz granulated garlic
2 oz ground black pepper
2 oz ground white pepper
3/4 oz ground red pepper
1 oz cumin
1-1/4 oz paprika
1-1/4 oz granulated onion
1/2 oz granulated sugar
2 oz salt(iodized)

 

Cousin Erik’s Bodacious B-B-Q Beans

46 oz can Pork & Beans
1 large onion(chopped) 1/2 pound bacon, ends & pieces(chopped)
3 Tbsp. mustard seed
1 cup ketchup(Heinz - Erik’s favorite)
1 cup BBQ sauce(Kraft original)
1 cup honey
1 tsp. liquid smoke
salt & pepper to taste

 

 

Directions

Mix ‘em all together and store in an air tight container. Jim told me he uses and old spice jar with a shaker top. Sear your favorite grillin’ meat then shake on some spices so they meld with the juices. If you like it tangy, shake on some more. Grill meat to desired doness. Jim sayez he don’t like to put the spice on the raw meat cause the salt draws the moisture out and he likes his juicy.

 

 

 

 



Put pork & beans in a colander and drain off the yucky stuff that come with ‘em. In a heavy sauce pan (black iron pot is best) sauté onion, bacon and mustard seed, until onions are clear, then drain off grease. Add remaining ingredients and beans and stir ‘em up real good.

Simmer over a low fire for at least an hour, the longer they cook the better they git, but be careful not to let them stick to the bottom of the pot and burn. If ‘en they do don’t, scrape the bottom when you stir unless you had so much fun makin’ em you want to start all over.
